Ingredients:
For the cake:
– 2 1/4 cups all-purpose flour
– 1 1/2 cups granulated sugar
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup whole milk
– 2 large eggs
– 1 cup grated carrots
– 1 cup crushed pineapple
– 1 teaspoon vanilla extract
– 1/2 cup chopped walnuts (optional)
For the cream cheese frosting:
– 8 ounces cream cheese, softened
– 1/2 cup unsalted butter, softened
– 2 cups powdered sugar
– 1 teaspoon vanilla extract
Instructions:
Preheat oven: Set your oven to 350°F (180°C).
Mix the cake batter: In a medium bowl, combine flour, sugar, baking powder, and salt. In a larger bowl, mix butter, milk, eggs, grated carrots, crushed pineapple, and vanilla extract. Add the dry ingredients to the wet mixture and stir until just combined. Fold in walnuts, if using.
Prepare pans: Divide the batter evenly between two 9-inch round cake pans and smooth the tops.
