Instructions:
- Preheat the Skillet: Heat the olive oil in a large skillet over medium heat.
- Cook the Potatoes: Add the diced potatoes to the skillet. Cook, stirring occasionally, until they start to turn golden and become tender, about 15-20 minutes. If you want them to cook faster, you can cover the skillet with a lid for a few minutes.
- Add Vegetables: Add the diced onion and bell pepper to the skillet. Cook for an additional 5 minutes, or until the vegetables are softened.

- Add Cheese: Sprinkle the shredded cheese evenly over the potato mixture. Reduce the heat to low, cover the skillet with a lid, and let it cook for a few minutes until the cheese is melted and bubbly.
- Garnish and Serve: Remove the skillet from heat. Garnish with chopped green onions and fresh parsley or cilantro if desired. Serve hot.
