Ingredients:
- For the Meatloaf:
- 1 lb ground beef
- 1 lb ground pork (or turkey, if preferred)
- 1 cup breadcrumbs (or crushed crackers)
- 1/2 cup milk
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 1 tablespoon mustard (yellow or Dijon)
- For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Mix the Meatloaf Ingredients: In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, chopped onion, minced garlic, eggs, salt, pepper, Worcestershire sauce, and mustard. Mix until well combined, but avoid overmixing.
- Shape the Meatloaf: Transfer the meat mixture to a loaf pan and shape it into a loaf, or shape it by hand on a baking sheet lined with parchment paper.
- Prepare the Glaze: In a small bowl, mix together the ketchup, brown sugar, and mustard until well combined. Spread half of the glaze over the top of the meatloaf.
- Bake: Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C). During the last 15 minutes of baking, spread the remaining glaze over the meatloaf.
- Rest and Serve: Once done, let the meatloaf rest for about 10 minutes before slicing. Serve with your favorite sides, like mashed potatoes and green beans.
Tips:
- You can add chopped bell peppers or carrots for extra flavor and nutrition.
- Leftover meatloaf makes great sandwiches the next day!
