Ingredients:
1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 lbs lean ground beef
30 Ritz crackers, crushed
2 oz Lipton onion soup mix (about 1 packet)
2 large eggs
24 oz frozen tater tots
2 cups shredded mozzarella and cheddar cheese blend
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Prepare the Meatloaf Mixture: In a large mixing bowl, combine the ground beef, crushed Ritz crackers, Lipton onion soup mix, and eggs. Mix well using your hands or a large spoon until all ingredients are evenly distributed.
Shape the Meatloaf: Press the meat mixture evenly into the prepared baking dish, forming it into a large loaf shape. Make sure the surface is smooth and even.
Top with Sauce: In a separate bowl, mix together the ketchup and barbecue sauce. Spread half of this mixture evenly over the top of the meatloaf.
Add the Tater Tots: Arrange the frozen tater tots in a single layer on top of the meatloaf, covering it completely.
Bake: Place the meatloaf in the preheated oven and bake for 35-40 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F or 70°C).
Add Cheese: After the initial baking, remove the meatloaf from the oven and sprinkle the shredded mozzarella and cheddar cheese blend generously over the tater tots.
Final Bake: Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve: Remove from the oven and let the meatloaf rest for a few minutes before slicing. Serve with the remaining ketchup and barbecue sauce mixture on the side for extra flavor.
