Carrot Cake Loaf

 

Ingredients:

– 2 cups grated carrots
– 1 3/4 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1 1/2 teaspoons baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1 cup white sugar
– 1 cup light brown sugar
– 1/2 cup vegetable oil
– 4 eggs
– 1 teaspoon vanilla extract

Directions:

1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
2. In a large bowl, combine the carrots, flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a separate bowl, whisk together the sugars, oil, eggs, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
6. Let the cake cool completely before frosting.
