BANANA CAKE

 

Ingredients :

– 3 medium well ripe bananas
– 3 eggs
– 250g of flour
– 150g of sugar
– 60ml of milk
– 80g of butter
– 15g chemical yeast (baking powder)
– 1 teaspoon of vanilla extract
– 1 pinch of salt

Preparation:

1. Put the cut bananas in a bowl Smash them with a fork until you get some sort of mash. Reserve this puree that will be the base of our Banana Cake.

2. In another bowl, put eggs in and beat with a whip until double in volume. Then add the vanilla extract, sugar, milk, a pinch of salt and the butter that you have previously melted in the microwave. Beat again until all the ingredients are well incorporated.

3. Next, sift the flour and yeast over the batter. Mix it all again with the whip until well integrated. Then add the reserved banana puree and mix it all.

4. Butter a cake mold with butter and pour batter. Place the mold in the preheated oven to 190oC and let it cook for about 40 minutes.

5. Finally do the cake with a toothpick. If it comes out clean it’s ready. Otherwise let it cook a few more minutes. When it’s fully cooked, take it out of the oven and let it sit for about an hour to cool and compact.
