Funnel Cake Bites

Ingredients:
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon (optional)
1 large egg
1 cup milk
1 tablespoon granulated sugar
1 teaspoon vanilla extract
Vegetable oil, for frying
Powdered sugar, for dusting
Directions:
Prepare the Batter:
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon (if using).
In another bowl, whisk together the egg, milk, granulated sugar, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until smooth. The batter should be slightly thicker than pancake batter.
Heat the Oil:
In a deep skillet or pot, heat about 2 inches of vegetable oil to 375°F (190°C).
Fry the Funnel Cake Bites:
Using a spoon or a small cookie scoop, carefully drop small dollops of batter into the hot oil. Fry the bites in batches, making sure not to overcrowd the pan.
Fry each batch for 2-3 minutes, turning occasionally, until golden brown and cooked through.
Drain and Dust:
Use a slotted spoon to remove the funnel cake bites from the oil and place them on a paper towel-lined plate to drain excess oil.
While still warm, dust the funnel cake bites generously with powdered sugar.
Serve:
Serve warm with additional powdered sugar if desired. You can also offer dipping sauces like chocolate, caramel, or fruit sauces for extra flavor.
