Ingredients:
For the Crust:
3/4 cup Fruity Pebbles cereal
1/2 cup graham cracker crumbs
3 tablespoons unsalted butter, melted
1/4 teaspoon salt
For the Filling:
16 ounces cream cheese, room temperature
2/3 cup granulated sugar
1/3 cup sour cream, room temperature
1 teaspoon vanilla extract
1/4 teaspoon salt
2 large eggs, room temperature
3/4 cup Fruity Pebbles cereal (plus more for sprinkling on top if desired)
Directions:
Preheat Oven:
Preheat your oven to 325°F (163°C).
Line a muffin pan with paper liners and set aside.
Prepare Crust:
3. In a medium bowl, mix together Fruity Pebbles, graham cracker crumbs, melted butter, and salt until well combined.
Divide the mixture evenly into the bottom of the cupcake liners, pressing down firmly.
Bake the crusts for 5 minutes, then set aside to cool while preparing the filling.
Make Filling:
6. Beat together cream cheese and sugar in a stand mixer on low speed until well combined and smooth.
Scrape down the sides of the bowl, then add sour cream, vanilla, and salt. Mix on low until well mixed.
With the mixer still running on low speed, add the eggs one at a time until just incorporated.
Carefully fold in Fruity Pebbles cereal.
Fill and Bake:
10. Spoon the mixture over the crusts, filling each liner almost to the top.
Bake until the edges are set and the centers slightly jiggle, about 16–18 minutes. ⏲️
Set the oven door slightly open and allow the cheesecakes to gradually cool for 10 minutes.
Cool and Serve:
13. Allow the cheesecakes to cool completely at room temperature, then refrigerate for at least four hours.
Sprinkle with additional Fruity Pebbles right before serving, if desired.
Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes
Kcal: Approximately 150 per cheesecake
Tips:
Use room-temperature ingredients for a smoother filling.
Do not overmix the batter to avoid introducing too much air, which can cause cracks.
Gradually cool the cheesecakes to prevent sinking and cracking.
For best results, wait until just before serving to add Fruity Pebbles on top to keep them from getting soggy.
