No Bake Easter Peanut Butter Bars

 

Ingredients:
– 1 cup creamy peanut butter
– 1/2 cup honey
– 1/2 cup coconut oil, melted
– 2 cups quick oats
– 1 cup shredded coconut
– 1/2 cup mini chocolate chips
– 1/2 cup pastel-colored M&M’s or other Easter-themed candies

Directions:
1. Line an 8×8-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.
2. In a microwave-safe bowl, combine the creamy peanut butter, honey, and melted coconut oil. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and well combined.
3. In a large mixing bowl, combine the quick oats and shredded coconut.
4. Pour the peanut butter mixture over the oats and coconut, and stir until evenly coated.
5. Fold in the mini chocolate chips and pastel-colored M&M’s or other Easter-themed candies.
6. Transfer the mixture to the prepared baking dish and press it down firmly into an even layer.
7. Refrigerate the bars for at least 2 hours, or until firm.
8. Once set, use the parchment paper overhang to lift the bars out of the baking dish. Cut into squares and serve.
