Ingredients:
• 9 sheets of graham crackers
• 2 extra-large chocolate bars (like Hershey’s Dark, 4.25 oz each)
• 1/2 cup chocolate chips (or another chocolate bar)
• 20-24 large marshmallows (the rectangular “Stackers” work best)
• 1 large egg
• 1 tsp oil
• 3/4 cup milk
• 1 cup + 2 tbsp all-purpose flour
• 3 tbsp granulated sugar
• 1/2 tsp baking powder
• 1/8 tsp salt
• 1 quart frying oil (for deep frying)
• Candy thermometer
Directions:
1. Prep the S’more: Line an 8×8-inch pan with cling wrap. Layer graham crackers on the bottom, spread melted chocolate chips, layer on chocolate bars, add more melted chocolate, top with marshmallows, and finish with another layer of graham crackers. Pop it in the fridge to set.
2. Make the Batter: Whisk together the egg, 1 tsp oil, and milk. In another bowl, mix the flour, sugar, baking powder, and salt. Combine the wet and dry ingredients until smooth.
3. Cut and Prep S’mores: Once your mega s’more is set, cut it into 36 squares. Keep them in the fridge until you’re ready to fry.
4. Frying Time: Heat your frying oil to 375°F in a saucepan. Dip each s’more square into the batter, making sure they’re nicely coated, and then deep fry them in batches until they’re golden brown, which usually takes about 2 minutes. Let them drain on some paper towels.
5. Serve ‘Em Up: These babies are best enjoyed while they’re still warm and gooey. Dive in and enjoy!
