SWEDISH MEATBALLS AND NOODLES

Ingredients

For the Meatballs:

  • 1 lb ground beef (or a mix of beef and pork)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 egg

For the Sauce:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup heavy cream (or sour cream)
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

For the Noodles:

  • 8 oz egg noodles (or your choice of pasta)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Meatballs:
    • In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, onion, garlic, salt, pepper, nutmeg, allspice, and egg. Mix until well combined.
    • Form the mixture into small meatballs, about 1 inch in diameter.
  2. Cook the Meatballs:
    • In a large skillet over medium heat, add a little oil and cook the meatballs in batches until browned on all sides and cooked through, about 8-10 minutes. Remove from the skillet and set aside.
  3. Make the Sauce:
    • In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
    • Gradually add the beef broth, whisking constantly to avoid lumps. Bring to a simmer and cook until slightly thickened.
    • Stir in the heavy cream and Worcestershire sauce. Season with salt and pepper to taste.
  4. Combine Meatballs and Sauce:
    • Return the cooked meatballs to the skillet and simmer in the sauce for an additional 5 minutes.
  5. Cook the Noodles:
    • While the meatballs are simmering, cook the egg noodles according to package instructions. Drain and set aside.
  6. Serve:
    • Serve the meatballs and sauce over the cooked noodles. Garnish with chopped parsley.
