apple slab pie

Ingredients

For the Pie Crust:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6-8 tablespoons ice water

For the Apple Filling:

  • 6-8 cups peeled and sliced apples (Granny Smith and Honeycrisp work well)
  • 3/4 cup sugar (adjust based on sweetness of apples)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 egg (for egg wash)
  • 1 tablespoon sugar (for sprinkling)

Instructions

  1. Make the Pie Crust:
    • In a large bowl, mix flour, salt, and sugar.
    • Cut in the butter until the mixture resembles coarse crumbs.
    • Stir in ice water, a tablespoon at a time, until the dough comes together.
    • Divide the dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
  2. Prepare the Filling:
    • In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla. Toss to coat. Set aside.
  3. Roll Out the Dough:
    • Preheat the oven to 375°F (190°C).
    • On a floured surface, roll out one disc of dough to fit a 13×18-inch rimmed baking sheet. Place the rolled dough in the pan, letting it hang over the edges.
  4. Add the Filling:
    • Pour the apple mixture into the crust, spreading it evenly.
  5. Top with Second Crust:
    • Roll out the second disc of dough and place it over the apple filling. Trim and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
  6. Add Egg Wash:
    • Beat the egg and brush it over the top crust. Sprinkle with sugar.
  7. Bake:
    • Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly. If the edges brown too quickly, cover them with foil.
  8. Cool and Serve:
    • Let the pie cool for at least 30 minutes before slicing. Serve warm or at room temperature, possibly with ice cream!

Tips

  • For added flavor, mix in some raisins or cranberries with the apple filling.
  • Adjust the sugar based on your taste and the tartness of the apples.
