Southern Tea Cake Cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp nutmeg (optional)
  • 1/4 tsp almond extract (optional)
  • Sugar for sprinkling (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, and nutmeg (if using).
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This should take about 2-3 minutes.
  4. Add Egg and Extracts: Beat in the egg, vanilla extract, and almond extract (if using) until well combined.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with your hand or the bottom of a glass. Sprinkle a little sugar on top if desired.
  7. Bake: Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
  8. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
