Cheesy Chicken Fritters

Ingredients:

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup breadcrumbs (or crushed crackers)
  • 2 large eggs
  • 1/4 cup green onions, chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying (vegetable or olive oil)

Instructions:

  1. Mix Ingredients: In a large bowl, combine the shredded chicken, cheese, breadcrumbs, eggs, green onions (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  2. Form Fritters: Using your hands, form the mixture into small patties or fritters, about 2-3 inches wide.
  3. Heat Oil: In a skillet, heat about 1/4 inch of oil over medium heat. You can test the oil by dropping in a small piece of the mixture; if it sizzles, it’s ready.
  4. Fry Fritters: Carefully place the fritters in the hot oil (do not overcrowd the pan). Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Drain and Serve: Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce, like ranch or a spicy mayo.

Tips:

  • You can add other ingredients like chopped bell peppers, herbs, or spices to customize the flavor.
  • For a healthier version, try baking them at 375°F (190°C) for about 20-25 minutes, flipping halfway through.

Enjoy your cheesy chicken fritters!
