Ingredients:
- 2 pounds beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 large carrots, peeled and sliced
- 3 potatoes, peeled and cubed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 cups sliced mushrooms
- Salt and pepper to taste
- Chopped fresh parsley, for garnish
Directions:
- Toss the beef cubes with flour until evenly coated.

- In a large pot, heat olive oil over medium-high heat. Brown the beef in batches on all sides. Remove and set aside.
- In the same pot, add onion and garlic. Sauté until onion is translucent.
- Return the beef to the pot. Add carrots, potatoes, thyme, rosemary, beef broth, and tomato paste. Stir well.
- Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until beef is tender.
- Add mushrooms and cook for an additional 30 minutes.
- Season with salt and pepper to taste. Garnish with chopped parsley before serving.
