Classic Irish Beef Stew

Ingredients:

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and sliced
  • 3 potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 cups sliced mushrooms
  • Salt and pepper to taste
  • Chopped fresh parsley, for garnish

Directions:

  • Toss the beef cubes with flour until evenly coated.

  • In a large pot, heat olive oil over medium-high heat. Brown the beef in batches on all sides. Remove and set aside.
  • In the same pot, add onion and garlic. Sauté until onion is translucent.
  • Return the beef to the pot. Add carrots, potatoes, thyme, rosemary, beef broth, and tomato paste. Stir well.
  • Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until beef is tender.
  • Add mushrooms and cook for an additional 30 minutes.
  • Season with salt and pepper to taste. Garnish with chopped parsley before serving.
