Pumpkin pie crumble bars

 

Ingredients:

For the crust and crumble:

1 1/2 cups all-purpose flour
1/2 cup old-fashioned oats
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
3/4 cup unsalted butter, melted
For the pumpkin filling:

1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves
1/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
1/4 cup heavy cream
Directions:

Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking dish with parchment paper.

Make the crust and crumble: In a medium bowl, mix together the flour, oats, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, and salt. Stir in the melted butter until the mixture is crumbly. Press half of the mixture into the bottom of the prepared baking dish to form the crust.

Bake the crust: Bake the crust in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and set aside.

Prepare the pumpkin filling: In another bowl, whisk together the pumpkin puree, granulated sugar, cinnamon, nutmeg, ginger, cloves, salt, egg, vanilla extract, and heavy cream until smooth and well combined.

Assemble the bars: Pour the pumpkin filling over the pre-baked crust, spreading it evenly. Sprinkle the remaining crumble mixture over the top.

Bake the bars: Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crumble topping is golden brown.

Cool and serve: Allow the bars to cool completely in the pan before cutting into squares. Serve at room temperature or chilled.
