Grilled Cheese with Gouda, Roasted Mushrooms, and Onions

 

Ingredients:
8 ounces mushrooms, sliced
1 medium onion, sliced (the sweeter the better)
2 tablespoons olive oil
Salt and pepper, to taste
4 tablespoons butter
4 slices bread of choice
1 cup gouda cheese, shredded
Instructions:
Preheat the oven to 400°F (200°C).

Prepare the vegetables: On a baking sheet, toss the sliced mushrooms and onion with olive oil. Sprinkle with salt and pepper to taste. Bake in the oven for about 20 minutes, or until they are roasted to your preference.

Melt the butter: In a skillet over medium heat, melt 4 tablespoons of butter.

Assemble the sandwiches: While the butter is melting, start assembling the sandwiches. On one slice of bread, layer shredded gouda, followed by a generous amount of roasted mushrooms and onions, and then another layer of gouda. Season with salt and pepper if desired. Top with the second slice of bread and lightly press together.

Grill the sandwiches: Place one sandwich in the melted butter for one second, then gently flip it over to the other side to coat both sides in butter. Repeat with the second sandwich. Cook for about 2 minutes on one side, until lightly browned. Gently flip and cook for an additional 2-3 minutes on the other side, or until the cheese is melted and the bread is browned to your liking.

Serve immediately: Slice the grilled cheese sandwiches in half and serve hot.
