Brown sausage and onions and put them in the crock pot with a box of broth, a small can of tomato paste and a can of diced tomatoes (I used Rotel with green chiles for extra flavor). Season with salt, pepper, and thyme and leave to cook for the day (low for 8 hours, high for 4). Add a bag of tortellini and a bag of fresh spinach and some heavy whipping cream. Let cook down for about an hour and serve with Parmesan cheese sprinkled on top. So good!
