Corn Fritters

 

Ingredients:
• 1 can whole kernel corn
• 2 eggs
• Salt & pepper
• 1/2 cup flour
• 1 tsp baking powder
• 1/2 cup shredded cheese
• 1 pat butter
• 2 tbsp oil
• 1/4 cup chopped parsley

Directions:
1. Drain the liquid from the corn.
2. Beat eggs in a bowl, then add salt and pepper.
3. Mix in flour and baking powder until smooth.
4. Stir in corn and cheese until well combined.
5. Heat butter and oil in a fry-pan over medium heat.
6. Spoon corn mixture into the pan.
7. Cook until golden brown, then flip and cook the other side.
8. Drain on paper towels and serve. Enjoy!
