Loaded Breakfast Casserole

 

Ingredients:

1 lb ground chicken sausage
1 diced bell pepper
1 diced onion
1 cup sliced mushrooms
1 cup spinach
8 large eggs
1/2 cup milk
1 cup shredded cheese
Salt and pepper to taste

Instructions:

Preheat Oven:

Preheat your oven to 350°F (175°C).
Cook Sausage:

In a skillet, brown the ground chicken sausage until fully cooked.
Sauté Vegetables:

Add the diced bell pepper, onion, sliced mushrooms, and spinach to the skillet.
Cook until the vegetables are soft.
Mix Eggs:

In a bowl, beat the eggs with milk, salt, and pepper.
Assemble Casserole:

In a baking dish, layer the cooked sausage and sautéed vegetables.
Pour the egg mixture over the sausage and vegetables.
Top with shredded cheese.
Bake:

Bake in the preheated oven for 30-35 minutes or until the casserole is set.
