Peach Cobbler Cheesecake Bars

Ingredients:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup melted butter
2 (8 oz) packages cream cheese, softened
½ cup granulated sugar
2 eggs
1 tsp vanilla extract
1 cup diced peaches (fresh or canned)
1 tsp ground cinnamon
¼ cup brown sugar
Instructions:
Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
In a medium bowl, combine graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
In a large bowl, beat cream cheese and ½ cup granulated sugar until smooth. Add eggs and vanilla extract, mixing until well combined.
Pour the cream cheese mixture over the crust and spread evenly.
In another bowl, mix diced peaches, ground cinnamon, and brown sugar. Sprinkle the peach mixture evenly over the cream cheese layer.
Bake for 30-35 minutes, or until the center is set. Allow to cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
Notes:
For extra flavor, add a drizzle of caramel sauce on top before serving.
