Ingredients:
Chili:
2 lbs of ground chuck (80/20)
⅓ lb of ground chorizo
1 can (6 ounces) of tomato paste
4 cups of water
1 can (8 ounces) of tomato sauce
1 large onion, minced (about 3 cups)
6 cloves of garlic, minced
3 tablespoons of chili powder
1 teaspoon of ground cumin
1 teaspoon of cinnamon
¾ teaspoon of ground allspice
¼ teaspoon of ground cloves
½ teaspoon of cayenne pepper
2 teaspoons of kosher salt
2 tablespoons of Worcestershire sauce
1 tablespoon of apple cider vinegar
½ ounce of unsweetened chocolate (optional)
Other:
Footlong or regular hot dogs
Hot dog buns
Yellow mustard
Chopped white onions
Shredded cheddar cheese from the block
Instructions:
Start by browning the ground chuck and chorizo in a skillet until they’re nicely cooked. Once done, set them aside to keep them warm.
In the same skillet, cook the minced onion and garlic until they’re soft and give off a lovely aroma.
Add the cooked meat back into the skillet along with the chili powder, cumin, cinnamon, allspice, cloves, and cayenne pepper. Stir it all together.
Mix in the tomato paste and tomato sauce. Adjust the consistency by adding water. Season with salt, Worcestershire sauce, and apple cider vinegar. If you like, throw in some unsweetened chocolate for extra richness.
Let the chili simmer on low heat for about 30 minutes to an hour. This gives all those flavors a chance to mingle and develop.
Give the chili a taste and tweak the seasoning if needed. If it’s too thick, feel free to add more water to get it just right.
While the chili is simmering away, grill or cook your hot dogs. And don’t forget to lightly toast those buns for some extra crunch.
Now comes the fun part: assembling the coneys! Place a hot dog in each bun, slather on some mustard, spoon over that delicious chili, sprinkle on some chopped onions, and finish it off with a generous helping of shredded cheddar cheese.
Pop your loaded coneys under the broiler until the cheese is all melty and gooey.
