HOW TO MAKE CHICKEN FRICASSÉE
Ingredients:
– 4 chicken legs (drumsticks and thighs)
– Salt and pepper to taste
– 2 tbsp butter
– 1 onion, chopped
– 2 carrots, sliced
– 2 tbsp flour
– 2 cups chicken broth
– 1 cup white wine
– 1 cup heavy cream
– 8 oz mushrooms, sliced
– Chopped fresh parsley for garnish
Instructions:
1. Season the chicken legs with salt and pepper.
2. Heat the butter in a large skillet over medium heat. Add the chicken legs and cook until browned on all sides, about 8-10 minutes. Remove the chicken from the skillet and set aside.
3. In the same skillet, sauté the chopped onion and sliced carrots until the onion is translucent and the carrots are slightly softened, about 5 minutes.
4. Sprinkle 2 tablespoons of flour over the vegetables and stir to combine. Cook for 1-2 minutes until the flour is lightly browned.
5. Gradually stir in the chicken broth and white wine, stirring constantly to prevent lumps. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
6. Add the chicken legs back to the skillet and pour the heavy cream over the top. Add the sliced mushrooms and stir to combine.
7. Cover the skillet and let it simmer for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened.
8. Serve the chicken fricassée hot, garnished with chopped parsley.
